There are three major grades of beef used by restaurants graded by the U.S.D.A. Select-Choice-PRIME. Prime being the best quality known for its rich marbling, flavor and tenderness.

Beef Brisket
Brisket comes from the pectoral muscle of the cow and is considered a locomotive muscle meaning the brisket is a tight muscle the cow frequently uses for movement making the brisket a tough piece of meat requiring a low temperature and slow method of cooking.
